You use PDFs very weirdly.

When working in illustrator, PDF is the format that allows you to save a file viewable by clients, while being staying completely editable by you (layers, symbols and all).

That's a huge feature ; it would be wrong to reduce the PDF to its possible closedness – which is what grubs,schnurr are doing.

But why would you be editing a PDF file that clients sent back to you? Don't you already have the original .ai files?
